Rainbow OMG Weekly Post 02/03/22

Hello Rainbow OMGers,

Rain, rain, glorious rain. We have been blessed with an abundance of rain in the last few days. The ground is soft underfoot and the soil is wet and warm so we should see an explosion of growth over the next week.

This week we continued working on the 10 new market garden beds at the front of the farm block, they will be ready for broad-forking very soon. We have also bottled our latest batch of Gardenkraut which is available in 400 g and 1 kg jars. We plan on starting the next batch immediately.

In other news Rainbow OMG will have a market stall at the upcoming Big Sky Festival in Rainbow on March 26. We are really looking forward to getting our produce in front of more people to expand our customer base.

Unfortunately we will not have any tomatoes this week, the abundant rain has made them split so we will be making passata for the freezer out of this weeks harvest. Never fear, they will be back next week 🙂

This week the garden is providing a lot of Zucchini’s, Bok Choi, Carrots Cucumbers, Beetroots, Butterhead Lettuce, Coriander, Rainbow Chard, Basil and Parsley.

Crops currently growing but not ready this week are Tomatoes, Green Beans and Capsicums.

Featured Product Of The Week

Some of our products may be a little different to what customers are used to so we will be providing Product Profiles in our Weekly Post and in a dedicated page on our website. This will provide recipe ideas and nutritional information for all of the vegetables we grow.

Product Focus: Gardenkraut

Most people are familiar with Sauerkraut which is a traditional side dish made of fermented cabbage. However did you know that almost any vegetable can be fermented?  Gardenkraut is our own take on the traditional recipe and is mostly made with Bok Choi rather than Cabbage and also contains Beetroots, Carrots, Ginger, Turmeric, Garlic and Himalayan Salt. All ingredients other than the salt are grown in our gardens.

Fermented Vegetables should be considered a Superfood. The lacto-fermentation process transforms vegetables into a very potent Probiotic, providing the following health benefits:

  • Reduced overall inflammation
  • Improvement of digestive disorders like leaky gut syndrome, ulcerative colitis, IBS and pouchitis
  • Improved immunity
  • Better nutrient absorption
  • Prevention and treatment of diarrhea
  • Prevention and symptom reduction of food allergies, including lactose intolerance, milk protein allergy and others
  • Improvement of high blood pressure
  • Reduced risk of cancer
  • Alleviation of arthritis inflammation
  • Reduction of eczema symptoms
  • Lowered cholesterol
  • Protection against H. pylori infection
  • Better immune response in HIV/AIDS patients
  • Improved vaginal health and prevention of bacterial infections like UTIs and bacterial vaginosis
  • Natural remedy for the liver/brain disease hepatic encephalopathy

Fermented Vegetables should be kept refrigerated.

When consuming Gardenkraut a little goes a long way so we suggest a serving size of one fork-full per person each day. This ensures a daily dose of probiotics and all the associated benefits without breaking the bank.
