Rainbow OMG Weekly Post 05/01/22

Happy New Year Rainbow OMGers,

We allowed ourselves some downtime over the holiday break but the veggies don’t stop growing so we are back into full swing and ready to make 2022 a creative and fulfilling year.

The first true heat wave of Summer hit us last week, while we did not suffer any losses, we observed that our plants almost hibernate in that kind of heat with little perceptible growth as the plants focus on keeping hydrated.

Beetroots are now back in limited supply this week however moving forward should be consistent, Green Beans are still kicking but also limited this week, we are harvesting Cucumbers almost daily, we have green Tomatoes starting to ripen on the vine (hopefully available next week), Basil is growing beautifully, Rainbow Chard and Bok Choi are powering through and Zucchini’s are inching closer to harvest size.

Our latest Gardenkraut is now in the fermenting crock. This ferment contains red and green cabbage, garlic and beetroots. Keep your eye out for this in a few weeks.

Vegetable Focus:  Cucumbers

Cucumbers are a Summer favourite and very familiar to most people. When it comes to nutrition and health benefits they contain:

  • Vitamins A, K and C
  • Magnesium and Potassium
  • Low in Calories
  • High in Antioxidants
  • Natural Diuretic to help maintain the bodies detox pathways
  • Hydrates and soothes skin with direct contact, good for sunburn
  • Assists in maintaining blood pH with its Alkaline properties
  • Supports Bone Health

Here are some ideas to get more Cucumber into your diet:

  • A favourite salad of ours in Cucumber, Basil, Cherry Tomatoes and Feta Cheese. It is very light and refreshing Summer dish
  • Use shredded in home made Tzatziki 
  • Keep sliced Cucumber in a Jug of water in the fridge for an refreshing and hydrating Summer drink, adding mint makes this even better
  • Juiced Cucumbers are delicious on their own or with other fruit and veg
  • Cucumbers can be added to a Stir Fry just like Zucchini
  • There is no need to peel our Cucumbers, nothing has touched their skin except water and sunshine 🙂
