Rainbow OMG Weekly Post 15/12/21

Hello Rainbow OMGers,

There is nothing better than the sound of rain on a tin roof in Summer. We thank the rain no matter when it falls and are always open to receive more.

This week saw some nice hot weather and we have planted our second succession of tomatoes. We now have 125 Tomatoe vines in the ground and growing with our greenhouse tomatoes setting fruit, we are holding hope for a Christmas gift of ripe Cherry Tomatoes. Unfortunately the hotter days this week have caused our Coriander to bolt but we have direct seeded 2 of our beds in attempt to get stronger plants. Coriander puts down roots very quickly and evidently. Does not like to be transplanted.

We have been picking at both Basil and Thai Basil so a larger harvest is likely to coincide with ripe Tomaotes very soon!

Beetroots are growing nicely and we will be back soon too.

Green Beans are now available

We are growing Bush Beans as part of our nitrogen fertility cycle and they are now fruiting nicely. Our 4 Week CSA members will receive Green Beans this week and there will be limited supply available in the webstore. See below for more information on the Humble Green Bean.

We only have one jar of Gardenkraut probiotic left. The next ferment we make will be based on Red Cabbage which will be making this week.

Vegetable Focus:  Green Beans

I must admit that I learnt a lot researching this week, I knew Green Beans were a plant source of protein but they provide much more nutrition and health benefits. The humble Green Bean contains:

  • High amounts of Antioxidants
  • Vitamins C, K and A
  • Manganese, Folate, Thiamine, Riboflavin, Iron, Magnesium and Potassium
  • Help regulate Blood Sugar
  • Improves Heart Health
  • Assists in maintaining Bone Density and Health

Here are some ideas to get more Green Beans into your diet:

  • Add sliced to any soup, stew or even meat sauce
  • Use in Stir Fry
  • Blanch whole beans and toss in a salad with Cherry Tomatoes, Feta Cheese and a balsamic based dressing
  • Fry with onions on the BBQ as a side dish
  • Make your own frozen beans. Beans do not lose much of their nutrients when frozen however they require blanching before freezing or they turn to mush. We recommend blanching, then spacing them on baking paper on an oven tray and putting them in the freezer. Once frozen they can be transferred into a snap lock bag and kept in the freezer without turning into a solid green brick.
